Chef Ahmad Azfar Zikri bin Ahmad Zaini recently joined Hyatt Regency Kinabalu as a baker chef de partie. His signature items are sourdough bread, buttermilk buns and coffee buns!
A wide selection of sourdough bread now available at Mosaic Cafe, Hyatt Regency Kinabalu. Sourdough bread contains the bacteria Lactobacillus in a higher proportion to yeast than other bread. More Lactobacillus means the higher production of lactic acid, which means less of the potentially dangerous phytic acid.
Chef Ahmad underwent si-month internship at La Pinera Ristorante in Livorno, Italy, where he learned that cooking is more than a job – it is a way of life. Every detail is important, including timing, measurement, and garnishes. He discovered his passion for baking during cooking and embarked on a journey that led him to become a baker chef de partie at Hyatt Regency Kinabalu
